Parmesan Crusted Zucchini
One of my favorite super simple go-to recipes. Minimal prep time, minimal whole ingredients. If you want to go vegan with this its easy just switch out the cheese for Nutritional Yeast mixed with a little panko brad crumbs for the crusty cheesy flavor.
Ingredients:
3 large zucchini
2 tablespoons olive oil
Cracked black pepper, to taste
Fine sea salt, to taste
2 cloves garlic, chopped
1/2 cup grated Parmesan cheese
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Zucchini: Wash the zucchini thoroughly and slice them lengthwise into thin fillets, about 1/4-inch thick. Pat them dry using a paper towel.
Season and Roast: Place the zucchini slices in a mixing bowl and drizzle the olive oil over them. Sprinkle cracked black pepper, fine sea salt, and chopped garlic evenly over the zucchini. Toss the zucchini slices gently to coat them with the oil and seasonings. Arrange the seasoned zucchini slices in a single layer on the prepared baking sheet. Roast them in the preheated oven for about 20 minutes or until they start to become tender and slightly golden.
Add Parmesan Coating: After the initial roasting time, remove the zucchini from the oven. Carefully flip each zucchini slice over. Spread a generous amount of grated Parmesan cheese over the top side of each zucchini slice, pressing it down slightly to adhere.
Return to Oven: Place the zucchini slices back on the baking sheet, cheese side down. Return the baking sheet to the oven and continue roasting for an additional 15 minutes, or until the zucchini is fully tender and the Parmesan cheese is melted and golden brown.
Serve: Once the zucchini is cooked to your desired level of crispness and the Parmesan is nicely crusted, remove the baking sheet from the oven. Carefully transfer the Parmesan-crusted zucchini fillets to a serving platter. Serve them hot as a delicious and flavorful side dish or appetizer.
