Lemon Blueberry Overnight Oats
Ingredients:
1/2 cup rolled oats
1 tablespoon Chia seeds
1/2 cup oat milk (or any other milk of your choice)
1/2 cup water
1 tablespoon shredded unsweetened coconut
1 tablespoon freshly squeezed lemon juice
1/4 cup blueberries
1/4 tablespoon raw organic honey (optional, adjust to taste)

Instructions:
In a medium-sized mixing bowl, combine the rolled oats and Chia seeds.
Add the oat milk and water to the bowl, stirring well to ensure the oats and Chia seeds are fully immersed in the liquid.
Add the shredded coconut and mix it into the oats mixture.
Squeeze the fresh lemon juice over the mixture and stir it in. The lemon juice adds a refreshing zing to the oats and complements the blueberries perfectly.
Gently fold in the blueberries, distributing them evenly throughout the mixture.
If you prefer a slightly sweet flavor, you can drizzle the raw organic honey over the oats. Adjust the amount of honey according to your taste preference.
Cover the bowl with a lid or plastic wrap and place it in the refrigerator. Allow the oats to soak overnight or for at least 4-6 hours. During this time, the oats and Chia seeds will absorb the liquid and become soft and creamy.
