Crispy Onion Rings

WFPB eating doesn't mean we can't still have our favorite crunchy crispy treats.  This super easy recipe uses Chickpea flour for a punch of protein (21grams per cup).

You can bake these delicious onion rings in the  the Oven at  425 F for 15-20 minutes, or like  I do it you can pop them in the Air Fryer at 400 F for 13 minutes, (keep an eye on them oven times  may vary).

Makes approximately 18 Rings
What you need:
1 Large  Vidalia or onion of your choice  sliced into 1/2" thick rings
1 Cup Panko bread crumbs
1/2 Cup  Chickpea Flour
1/2  Cup Water
1/4  Tsp Garlic Powder
1/4 Tsp Sea Salt
1/4 Tsp  Onion Powder
Ground Black Pepper to  taste

In  a bowl whisk together  flour,  garlic powder, onion powder, salt & pepper. Slowly whisk in the water until  a well combined batter is formed. Place the  bread crumbs on a plate and set to the side.

One at a time dip each onion ring into  your batter, let excess drip off, then dredge the ring in the panko bread crumbs  coat well on both sides and place the ring  on your baking sheet or air fryer basket.

Tori's Tip: I spritz the rings with a tiny spray of 100% olive oil baking spray to give them that extra crunch!

Pop them in the Air Fryer at 400 F for 13 minutes, or the conventional oven at 425 F for 15-20 minutes. Serve with your favorite  whole food dip and enjoy!
